Asian Pot

Ingredients
- 1 lb of boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons of vegetable oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of sliced carrots
- 1/2 cup of soy sauce
- 1/4 cup of hoisin sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1 cup of chicken broth
- 2 cups of cooked white rice
- Sesame seeds and green onions for garnish
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat.
- Add the sliced onion and cook for 2-3 minutes until softened.
- Add the minced garlic, red bell pepper, broccoli, and carrots to the skillet. Cook for an additional 5 minutes, stirring occasionally.
- In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, cornstarch, and chicken broth.
- Pour the sauce mixture into the skillet with the vegetables. Stir and bring to a simmer.
- Add the cooked chicken back into the skillet and stir to combine with the sauce and vegetables. Cook for an additional 2-3 minutes until the sauce thickens.
- Serve the Asian pot over cooked white rice and garnish with sesame seeds and sliced green onions. Enjoy!
