Shredded Beef and Cheese Arepas

Ingredients
- 2 cups of pre-cooked shredded beef
- 1 cup of shredded mozzarella cheese
- 2 cups of pre-cooked cornmeal
- 3 cups of warm water
- 1 teaspoon of salt
- 2 tablespoons of vegetable oil
Instructions
- In a large bowl, mix the pre-cooked shredded beef with the shredded mozzarella cheese. Set aside.
- In a separate bowl, combine the pre-cooked cornmeal with the warm water and salt. Mix until a soft dough forms.
- Divide the dough into 6 equal portions and shape each portion into a ball. Flatten each ball to form a patty about 1/2 inch thick.
- Heat the vegetable oil in a non-stick skillet over medium heat. Add the arepas and cook for 5-7 minutes on each side, or until golden brown and crispy.
- Once the arepas are cooked, carefully slice each one horizontally to form a pocket without cutting all the way through.
- Stuff each arepa with the shredded beef and cheese mixture.
- Serve the stuffed arepas warm and enjoy!
