Instructions

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
  • In a large bowl, whisk together 2 cups of flour, 1/2 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg.
  • In a separate bowl, mix together 1/2 cup melted butter, 2 eggs, 1 cup milk, and 1 teaspoon vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in 2 cups of diced apples until evenly distributed in the batter.
  • Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
