Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup Dijon mustard
- 1/2 cup honey
- 1 tablespoon canola oil
- 2 teaspoons lemon juice
- 1 cup sliced mushrooms
- 1 cup shredded Colby Jack cheese
- 8 slices of bacon, cooked and crumbled
- 4 large potatoes, peeled and cubed
- 4 cloves of garlic, minced
- 1/2 cup butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- In a small bowl, mix together 1/2 cup Dijon mustard, 1/2 cup honey, 1 tablespoon canola oil, and 2 teaspoons lemon juice. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours.
