Instructions

  • In a small bowl, mix together 1/2 cup Dijon mustard, 1/2 cup honey, 1 tablespoon canola oil, and 2 teaspoons lemon juice. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6 to 7 minutes per side, or until fully cooked. During the last 2 minutes of grilling, place 1/4 cup of sliced mushrooms and 1/4 cup of shredded Colby Jack cheese on each chicken breast. Close the grill lid to melt the cheese.
