Al Pastor Tacos have a rich history, originating from the Lebanese immigrants who settled in Mexico. The dish is characterized by marinated pork cooked on a vertical spit, similar to shawarma. The meat is typically seasoned with a blend of dried chilies, spices, and pineapple for a sweet and savory flavor. While traditionally served in tortillas, a modern twist has emerged with the use of lettuce wraps, offering a lighter, gluten-free alternative. Chefs like Rick Bayless and Aaron Sanchez have popularized this variation, infusing it with their own unique flair. Today, the best versions of these Al Pastor lettuce wraps can be found in trendy Mexican fusion restaurants across the United States. The key to perfecting this dish lies in the marination process, ensuring the pork is tender and bursting with flavor. For a unique twist, some chefs incorporate grilled pineapple chunks into the filling, adding a delightful sweetness to the savory pork.
