Agua de Horchata

Ingredients
- 1 cup of long-grain white rice
- 2 cinnamon sticks
- 4 cups of water
- 1 cup of sugar
- 1 teaspoon of vanilla extract
- 2 cups of milk
- Ice cubes (optional)
Instructions
- In a blender, combine 1 cup of long-grain white rice and 2 cinnamon sticks. Blend until the rice and cinnamon sticks are finely ground.
- Transfer the rice and cinnamon mixture to a large pitcher and add 4 cups of water. Stir well and let it sit at room temperature for at least 3 hours, or preferably overnight.
- After the rice mixture has soaked, remove the cinnamon sticks and blend the mixture until smooth.
- Strain the blended rice mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.
- Add 1 cup of sugar and 1 teaspoon of vanilla extract to the strained rice liquid. Stir until the sugar is completely dissolved.
- Stir in 2 cups of milk until well combined.
- Refrigerate the horchata until chilled, about 2 hours.
- Serve the horchata over ice cubes if desired. Stir before serving. Enjoy!
