  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 2 cups of milk

Instructions

  • In a blender, combine 1 cup of long-grain white rice and 2 cinnamon sticks. Blend until the rice and cinnamon sticks are finely ground.
  • Transfer the rice and cinnamon mixture to a large pitcher and add 4 cups of water. Stir well and let it sit at room temperature for at least 3 hours, or preferably overnight.
  • After the rice mixture has soaked, remove the cinnamon sticks and blend the mixture until smooth.
  • Strain the blended rice mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.
  • Add 1 cup of sugar and 1 teaspoon of vanilla extract to the strained rice liquid. Stir until the sugar is completely dissolved.
  • Stir in 2 cups of milk until well combined.
  • Refrigerate the horchata until chilled, about 2 hours.
  • Serve the horchata over ice cubes if desired. Stir before serving. Enjoy!
