Zucchini Fritters with Tzatziki Sauce
Created by: Howcan Team
Ingredients
- 2 medium zucchinis, grated and squeezed to remove excess moisture
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 2 large eggs, beaten
- 3 tablespoons olive oil
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess moisture
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated zucchini, salt, and black pepper. Let it sit for 10 minutes, then squeeze out any excess moisture.
- Add the flour, Parmesan cheese, garlic, green onions, and beaten eggs to the zucchini mixture. Stir until well combined.
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
- Scoop 1/4 cup of the zucchini mixture and place it in the skillet, flattening it with a spatula to form a fritter. Repeat to make 4 fritters, cooking in batches if necessary.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Add more olive oil to the skillet for each batch if needed. Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
- In a small bowl, combine the Greek yogurt, grated cucumber, dill, lemon juice, and extra virgin olive oil. Season with salt and pepper to taste, and stir until well combined.
- Serve the zucchini fritters with the tzatziki sauce on the side. Enjoy!
Zucchini fritters, also known as kolokithokeftedes, have a rich history in Greek cuisine. These crispy, golden-brown delights are made by grating zucchini, mixing it with herbs, feta cheese, and flour, then frying until perfectly crisp. The dish is believed to have originated in the Mediterranean region, where fresh zucchinis are abundant. The addition of tzatziki sauce, a creamy blend of yogurt, cucumber, and garlic, adds a refreshing and tangy contrast to the savory fritters. Renowned Greek chefs like Yotam Ottolenghi have popularized this dish, and it's a staple in many Greek tavernas. For the best version, seek out restaurants in Greece or Greek-inspired eateries known for their authentic flavors. The key to perfecting this dish lies in achieving the ideal balance of crispy texture and flavorful zucchini, as well as crafting a creamy, garlicky tzatziki sauce to accompany it.
