Ingredients
- 2 medium zucchinis
- 1/2 cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
- Cut the zucchinis into thin strips, similar to the size of traditional fries.
- In one shallow dish, place 1/2 cup of all-purpose flour. In another shallow dish, beat 2 eggs. In a third shallow dish, combine 1 cup of breadcrumbs, 1/2 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Dip each zucchini strip into the flour, then the beaten eggs, and finally the breadcrumb mixture, ensuring they are evenly coated. Place the coated zucchini strips onto the prepared baking sheet.
- Lightly spray the coated zucchini strips with cooking spray to help them crisp up in the oven.
- Bake in the preheated oven for 18-20 minutes, or until the zucchini fries are golden and crispy, flipping them halfway through the cooking time for even browning.
- Remove from the oven and let them cool for a few minutes before serving. Enjoy the zucchini fries with your favorite dipping sauce.
