Ingredients
- 2 medium zucchinis, sliced
- 2 medium yellow squash, sliced
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
- In a large bowl, toss together 2 medium zucchinis and 2 medium yellow squash slices, 1/4 cup olive oil, 1/2 cup grated Parmesan cheese, 1/2 cup shredded mozzarella cheese, 1/4 cup chopped fresh basil, 2 cloves minced garlic, and salt and pepper to taste.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle 1/2 cup breadcrumbs over the top of the casserole.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the vegetables are tender.
- Allow to cool for 5 minutes before serving. Enjoy!
