Ingredients
- 1 cup of water
- 1/2 cup of unsalted butter
- 1/4 teaspoon of salt
- 1 cup of all-purpose flour
- 4 eggs
- Vegetable oil for frying

Instructions
- In a medium saucepan, bring 1 cup of water, 1/2 cup of unsalted butter, and 1/4 teaspoon of salt to a boil.
- Stir in 1 cup of all-purpose flour and reduce heat to low. Stir vigorously until the mixture forms a ball, about 1 minute.
- Remove from heat and let cool for 5 minutes.
- Add 4 eggs, one at a time, stirring well after each addition to form a smooth batter.
- In a large heavy-bottomed pot, heat 2 inches of vegetable oil to 375°F (190°C).
- Drop batter by rounded tablespoonfuls into the hot oil and fry until golden brown, about 3-4 minutes, turning occasionally.
- Remove with a slotted spoon and drain on paper towels.
- Repeat with the remaining batter.
- Place 1/2 cup of powdered sugar in a shallow bowl and roll the warm zeppole in the sugar to coat evenly.
