  • Remove from heat and let cool for 5 minutes.
  • Add 4 eggs, one at a time, stirring well after each addition to form a smooth batter.
  • In a large heavy-bottomed pot, heat 2 inches of vegetable oil to 375°F (190°C).
  • Drop batter by rounded tablespoonfuls into the hot oil and fry until golden brown, about 3-4 minutes, turning occasionally.
  • Remove with a slotted spoon and drain on paper towels.
  • Repeat with the remaining batter.
  • Place 1/2 cup of powdered sugar in a shallow bowl and roll the warm zeppole in the sugar to coat evenly.
  • Serve warm and enjoy!
