Yakisoba

Ingredients
- 8 ounces of yakisoba noodles
- 2 tablespoons of vegetable oil
- 1 small onion, thinly sliced
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1 cup of cabbage, shredded
- 1/2 cup of shiitake mushrooms, sliced
- 1/2 pound of thinly sliced pork or chicken
- 1/4 cup of yakisoba sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of soy sauce
- 1 teaspoon of sugar
- 1/4 teaspoon of black pepper
- 1/4 cup of green onions, chopped
- Pickled ginger and bonito flakes for garnish (optional)
Instructions
- Cook the yakisoba noodles according to the package instructions. Drain and set aside.
- In a small bowl, mix together 1/4 cup of yakisoba sauce, 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 teaspoon of sugar, and 1/4 teaspoon of black pepper. Set aside.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the thinly sliced pork or chicken and cook until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil. Add the onion, carrot, bell pepper, cabbage, and shiitake mushrooms. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Add the cooked noodles and the cooked pork or chicken back into the pan. Pour the sauce over the noodles and toss everything together until well combined and heated through.
- Garnish with chopped green onions, pickled ginger, and bonito flakes if desired.
- Serve hot and enjoy your delicious homemade yakisoba!
