Instructions

  • Toast the 4 slices of whole wheat bread until golden brown.
  • While the bread is toasting, cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste.
  • In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the 4 eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.
  • Spread the mashed avocado evenly onto the toasted whole wheat bread slices.
  • Place a cooked egg on top of each avocado-covered toast slice.
