Ingredients
- 4 slices of whole wheat bread
- 1 ripe avocado
- 4 eggs
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Toast the 4 slices of whole wheat bread until golden brown.
- While the bread is toasting, cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste.
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the 4 eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.
