Ingredients
- 8 oz whole wheat pasta
- 2 boneless, skinless chicken breasts
- 2 cups fresh basil leaves
- 3 cloves garlic
- 1/4 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the whole wheat pasta according to the package instructions. Drain and set aside.
- Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, then grill for 6-7 minutes per side, or until cooked through. Remove from the grill and let rest for 5 minutes before slicing into strips.
- In a food processor, combine the basil, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped. With the processor running, slowly pour in the olive oil until the pesto is smooth. Season with salt and pepper to taste.
- In a large bowl, toss the cooked pasta with the pesto until well coated. Divide the pasta among serving plates and top with the grilled chicken strips.
