The history of waffles dates back to the Middle Ages, where they were first cooked over an open fire using two metal plates with wooden handles. The modern version of the waffle we know today originated in Belgium, where they were popularized in the 19th century. Chefs in Brussels and Liege perfected the recipe, creating two distinct types of waffles: the Brussels waffle, known for its rectangular shape and deep pockets, and the Liege waffle, which is sweeter and denser due to the addition of pearl sugar. Today, the best waffles can still be found in Belgium, particularly in local eateries and food stalls. The key to a perfect waffle lies in the batter - a delicate balance of flour, eggs, milk, and leavening agents. While traditional waffles are made using a specialized waffle iron, creative chefs have also experimented with unconventional methods, such as using a panini press or even grilling the batter over an open flame. Whether enjoyed with a dusting of powdered sugar, a drizzle of syrup, or a dollop of whipped cream, waffles continue to be a beloved breakfast and brunch staple around the world.
