Extra Feta Viral Pasta

Ingredients
- 1 block of feta cheese (200g)
- 500g cherry tomatoes
- 1/2 cup extra virgin olive oil
- 4 cloves of garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 400g pasta of your choice
- 1/2 cup fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/2 cup crumbled feta cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes. Drizzle with 1/4 cup of olive oil and sprinkle with minced garlic, red pepper flakes, salt, and pepper.
- Bake for 30 minutes, or until the feta is soft and the tomatoes are bursting.
- While the feta and tomatoes are baking, cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.
- Once the feta and tomatoes are done, remove from the oven and use a fork to mash the feta and mix it with the tomatoes until creamy.
- Add the cooked pasta to the baking dish and toss to coat, adding the reserved pasta water as needed to loosen the sauce.
- Stir in the fresh basil leaves, grated Parmesan cheese, and crumbled feta cheese. Drizzle with the remaining 1/4 cup of olive oil and toss to combine.
- Serve immediately and enjoy the extra creamy and cheesy feta pasta!
