  • 1 block of feta cheese (200g)
  • 500g cherry tomatoes
  • 1/2 cup extra virgin olive oil
  • 4 cloves of garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 400g pasta of your choice
  • 1/2 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese

  • Salt and pepper to taste
  • 400g pasta of your choice
  • 1/2 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes. Drizzle with 1/4 cup of olive oil and sprinkle with minced garlic, red pepper flakes, salt, and pepper.
  • Bake for 30 minutes, or until the feta is soft and the tomatoes are bursting.
  • While the feta and tomatoes are baking, cook the pasta according to the package instructions. Reserve 1/2 cup of pasta water before draining.
  • Once the feta and tomatoes are done, remove from the oven and use a fork to mash the feta and mix it with the tomatoes until creamy.
  • Add the cooked pasta to the baking dish and toss to coat, adding the reserved pasta water as needed to loosen the sauce.
  • Stir in the fresh basil leaves, grated Parmesan cheese, and crumbled feta cheese. Drizzle with the remaining 1/4 cup of olive oil and toss to combine.
  • Serve immediately and enjoy the extra creamy and cheesy feta pasta!
