Ingredients
- 10 oz cherry tomatoes
- 1/2 cup olive oil
- 1 block (7 oz) feta cheese
- 3 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 8 oz pasta (such as penne or rigatoni)
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine 10 oz cherry tomatoes, 1/4 cup of olive oil, and a pinch of salt. Place the block of feta cheese in the center of the tomatoes. Drizzle the remaining 1/4 cup of olive oil over the feta. Sprinkle minced garlic and red pepper flakes over the tomatoes and feta.
- Bake for 30 minutes, or until the tomatoes are bursting and the feta is golden and melty.
- While the feta and tomatoes are baking, cook 8 oz of pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
- Once the feta and tomatoes are done baking, remove from the oven and use a fork to mash the feta and tomatoes together until well combined.
- Add the cooked pasta to the baking dish and toss to coat, adding reserved pasta water as needed to create a creamy sauce.
- Season with salt and pepper to taste, and garnish with fresh basil before serving.
