Instructions

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine 10 oz cherry tomatoes, 1/4 cup of olive oil, and a pinch of salt. Place the block of feta cheese in the center of the tomatoes. Drizzle the remaining 1/4 cup of olive oil over the feta. Sprinkle minced garlic and red pepper flakes over the tomatoes and feta.
  • Bake for 30 minutes, or until the tomatoes are bursting and the feta is golden and melty.
  • While the feta and tomatoes are baking, cook 8 oz of pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • Once the feta and tomatoes are done baking, remove from the oven and use a fork to mash the feta and tomatoes together until well combined.
  • Add the cooked pasta to the baking dish and toss to coat, adding reserved pasta water as needed to create a creamy sauce.
  • Season with salt and pepper to taste, and garnish with fresh basil before serving.
