Ingredients
- 8 rice paper wrappers
- 2 ripe avocados, sliced
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 1/4 cup peanut sauce
- 1/4 cup water
Instructions
- Prepare all the ingredients and have them ready for assembly.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place the wrapper on a clean, damp kitchen towel.
- In the center of the wrapper, layer a few slices of avocado, shredded lettuce, carrots, mint leaves, cilantro, and chopped peanuts.
- Fold the sides of the wrapper over the filling, then roll it up tightly, similar to a burrito. Repeat with the remaining wrappers and filling ingredients.
- In a small bowl, mix the hoisin sauce, peanut sauce, and water to create a dipping sauce.
- Serve the spring rolls with the dipping sauce and enjoy!
