  • 1/4 cup water

Instructions

  • Prepare the rice paper wrappers according to package instructions, usually by dipping them in warm water for a few seconds until soft and pliable.
  • Lay the softened rice paper wrapper on a clean, damp kitchen towel.
  • In the center of the wrapper, place 2 shrimp, a small handful of rice vermicelli noodles, lettuce, mint, cilantro, shredded carrots, and chopped peanuts.
  • Fold the sides of the wrapper over the filling, then roll it up tightly, similar to a burrito.
  • Repeat with the remaining wrappers and filling ingredients.
  • In a small bowl, mix the hoisin sauce, peanut sauce, and water to create a dipping sauce.
  • Serve the summer rolls with the dipping sauce and enjoy!
