Vietnamese Com Tam, or broken rice, originated in the southern regions of Vietnam. This humble dish was created as a way to utilize fractured rice grains, which were considered less valuable. Com Tam is typically served with a variety of accompaniments such as grilled pork, shredded pork skin, and a fried egg. The dish is often garnished with pickled vegetables and a side of fish sauce. One of the most famous versions of Com Tam can be found at the bustling street stalls of Ho Chi Minh City, where skilled chefs expertly grill the pork to perfection. The key to a delicious Com Tam lies in the tender, flavorful grilled pork and the fragrant broken rice. This dish has become a beloved staple in Vietnamese cuisine, offering a delightful mix of textures and flavors.
