  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp lemongrass, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp vegetable oil
  • 1 baguette, cut into 4 equal pieces and split lengthwise
  • 1 cup pickled carrots and daikon
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh basil leaves
  • 1 jalapeño, thinly sliced
  • Mayonnaise, for spreading

Instructions

  • In a bowl, combine 3 tbsp lemongrass, 3 cloves minced garlic, 2 tbsp fish sauce, 2 tbsp soy sauce, 2 tbsp honey, and 1 tbsp vegetable oil. Add the chicken thighs and marinate for at least 30 minutes.
  • Preheat grill to medium-high heat. Grill the chicken thighs for 6-8 minutes per side, or until fully cooked and slightly charred. Remove from grill and let rest for 5 minutes before slicing.
  • Spread mayonnaise on the cut sides of the baguette. Place the grilled lemongrass chicken on the bottom half of the baguette, then top with pickled carrots and daikon, fresh cilantro, mint, basil, and sliced jalapeño.
  • Serve immediately and enjoy!
