Instructions

  • In a skillet over medium heat, cook the veggie sausage patties according to the package instructions. Once cooked, chop the patties into small pieces and set aside.
  • In the same skillet, add a little oil if needed and sauté the diced bell peppers and onions until they are softened, about 3-4 minutes.
  • In a bowl, whisk together the eggs, diced tomatoes, salt, and black pepper.
  • Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring occasionally, until the eggs are scrambled and fully cooked.
  • Lay out the flour tortillas and divide the cooked veggie sausage, eggs, and shredded cheese between the two tortillas.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • If desired, heat a clean skillet over medium heat and lightly toast the burritos on all sides for a crispier texture.
