  • In a large non-stick skillet, cook the veggie sausage patties over medium heat for 5-6 minutes on each side, or until browned and heated through. Remove from the skillet and set aside.
  • In the same skillet, add the frozen hash browns and cook for 3-4 minutes, stirring occasionally, until they are golden and crispy. Remove from the skillet and set aside.
  • In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet and cook, stirring occasionally, until they are scrambled and fully cooked. Remove from the skillet and set aside.
  • Place a large flour tortilla on a clean surface. Arrange 2 cooked veggie sausage patties in the center of the tortilla, followed by half of the scrambled eggs and half of the crispy hash browns. Sprinkle with 2 tablespoons of shredded cheddar cheese.
  • Fold the sides of the tortilla over the filling, then roll it up tightly to form a wrap. Repeat with the remaining tortilla and filling.
  • If desired, heat a clean skillet over medium heat and lightly spray with cooking spray or oil. Place the wraps seam-side down in the skillet and cook for 2-3 minutes on each side, or until they are golden and crispy.
  • Slice the wraps in half and serve immediately. Enjoy!
