  • Stir in the diced tomatoes (with their juices), vegetable broth, rice, black beans, paprika, cayenne pepper, thyme, oregano, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove the pot from the heat and let it sit, covered, for 5 minutes.
