- 1 cup long-grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped (for garnish)
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion, green bell pepper, and celery. Cook for 5 minutes, or until the vegetables are softened.
- Add the minced garlic and cook for an additional 1 minute.
- Stir in the diced tomatoes (with their juices), vegetable broth, rice, black beans, paprika, cayenne pepper, thyme, oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the pot from the heat and let it sit, covered, for 5 minutes.
- Fluff the jambalaya with a fork and taste for seasoning, adding more salt and pepper if needed.
