Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 1 avocado, diced
- For the salsa:
- 2 large tomatoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and bell pepper, and cook for 5 minutes until softened.
- Stir in the minced garlic, black beans, and corn kernels. Season with cumin, paprika, chili powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
- Create 4 wells in the bean and vegetable mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- In a small bowl, combine the diced tomatoes, red onion, jalapeno, cilantro, lime juice, salt, and pepper to make the salsa. Mix well and set aside.
- Once the eggs are cooked to your liking, remove the skillet from the heat. Top with halved cherry tomatoes, chopped cilantro, and diced avocado.
- Serve the vegetarian breakfast skillet hot with a side of fresh salsa. Enjoy!
