Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 8 small corn tortillas
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a medium bowl, mix together the black beans, corn, red bell pepper, red onion, cumin, chili powder, garlic powder, and salt.
- In a large skillet, heat the olive oil over medium heat. Add the black bean mixture and cook for 5-7 minutes, stirring occasionally, until heated through.
- While the black bean mixture is cooking, warm the corn tortillas in a separate skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, spoon the black bean mixture onto each tortilla. Top with avocado slices and chopped cilantro. Serve with lime wedges on the side.
