Vegetable Stew

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 2 potatoes, peeled and diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté for 3-4 minutes until fragrant.
- Add the diced carrots, celery, bell pepper, and potatoes to the pot, and cook for 5-6 minutes, stirring occasionally.
- Pour in the diced tomatoes and vegetable broth, and bring the stew to a simmer.
- Stir in the green beans, dried thyme, and paprika. Season with salt and pepper to taste.
- Cover the pot and let the stew simmer for 30-35 minutes, or until the vegetables are tender.
- Taste and adjust seasoning if needed before serving.
- Serve the vegetable stew hot and enjoy!
