Instructions

  • Add the diced carrots, celery, bell pepper, and potatoes to the pot, and cook for 5-6 minutes, stirring occasionally.
  • Pour in the diced tomatoes and vegetable broth, and bring the stew to a simmer.
  • Stir in the green beans, dried thyme, and paprika. Season with salt and pepper to taste.
  • Cover the pot and let the stew simmer for 30-35 minutes, or until the vegetables are tender.
  • Taste and adjust seasoning if needed before serving.
