This hearty and nutritious dish has been enjoyed for centuries, with each region adding its own unique twist. Chefs around the world have put their own spin on this classic, using a variety of fresh, seasonal vegetables and aromatic herbs and spices. In Mediterranean regions, chefs often use olive oil, tomatoes, and a mix of zucchini, eggplant, and bell peppers. In India, vegetable stew, or sambar, is a popular dish made with lentils, tamarind, and a blend of spices.
