Mediterranean

The history of Vegetable Shish Kebab dates back to ancient times, originating in the Middle East and Mediterranean regions. This vegetarian twist on the traditional kebab features a colorful array of marinated vegetables skewered and grilled to perfection. Renowned chefs like Yotam Ottolenghi have popularized this dish, infusing it with their own unique blend of spices and flavors. Today, the best versions of this dish can be found in authentic Middle Eastern and Mediterranean restaurants, where chefs meticulously prepare the kebabs with a variety of fresh vegetables like bell peppers, zucchini, onions, and mushrooms. The key to a delicious Vegetable Shish Kebab lies in the marination process, where the vegetables are infused with a blend of herbs, spices, and olive oil before grilling. This dish offers a healthy and flavorful alternative to traditional meat kebabs, making it a favorite among vegetarians and food enthusiasts alike.
