Spicy Vegetable Pineapple Fried Rice

Ingredients
- 2 cups cooked white rice
- 1 cup diced pineapple
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a small bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of chili sauce, and 1 teaspoon of sesame oil. Set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and diced onion, and sauté for 2-3 minutes until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are slightly tender.
- Push the vegetables to one side of the skillet and add the cooked white rice to the empty space. Stir-fry the rice for 2-3 minutes to heat through.
- Pour the prepared sauce over the rice and vegetables, and toss everything together until well combined.
- Add the diced pineapple and red pepper flakes to the skillet, and continue to stir-fry for another 2-3 minutes.
- Season with salt and pepper to taste, and remove from heat.
- Garnish with chopped green onions before serving.
