  • 2 cups of marinara sauce
  • 2 cups of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 1 cup of breadcrumbs
  • 1/4 cup of olive oil
  • 2 zucchinis, sliced
  • 2 yellow squash, sliced
  • 1 egg, beaten
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
  • In a shallow dish, mix together 1/2 cup of grated Parmesan cheese, breadcrumbs, dried oregano, dried basil, salt, and pepper.
  • Dip the zucchini and yellow squash slices into the flour, then into the beaten egg, and finally into the breadcrumb mixture, coating evenly. Place the coated slices in a single layer on a baking sheet.
  • Bake the coated zucchini and yellow squash slices for 20 minutes, or until they are golden and crisp. Remove from the oven and set aside.
  • Spread 1 cup of marinara sauce in the bottom of the prepared baking dish. Arrange half of the baked zucchini and yellow squash slices over the sauce. Sprinkle with half of the shredded mozzarella cheese and half of the remaining grated Parmesan cheese. Repeat the layers with the remaining ingredients.
  • Drizzle the olive oil over the top layer and bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  • Allow to cool for a few minutes before serving. Enjoy the extra cheesy vegetable parmesan!
