Ingredients
- 2 cups of marinara sauce
- 1 teaspoon of red pepper flakes
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of breadcrumbs
- 1/2 cup of all-purpose flour
- 2 eggs, beaten
- 2 cups of mixed vegetables (such as zucchini, eggplant, and bell peppers), sliced
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan, heat the marinara sauce over medium heat. Add 1 teaspoon of red pepper flakes and simmer for 5 minutes. Set aside.
- In a shallow dish, combine 1/2 cup of grated Parmesan cheese and 1/4 cup of breadcrumbs. In another shallow dish, place 1/2 cup of all-purpose flour. In a third shallow dish, beat 2 eggs.
- Dip the sliced vegetables into the flour, then the beaten eggs, and finally the Parmesan-breadcrumb mixture, ensuring they are evenly coated.
- Heat 1/4 cup of olive oil in a large skillet over medium-high heat. Add the coated vegetables and cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- In a baking dish, spread a thin layer of the spicy marinara sauce. Arrange the cooked vegetables on top of the sauce. Pour the remaining sauce over the vegetables and sprinkle with the remaining Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the sauce is bubbly and the cheese is golden brown.
