Ingredients
- 1 cup of quinoa
- 1 cup of green lentils
- 8 cups of vegetable broth
- 1 onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 1 red bell pepper, diced
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1/4 teaspoon of red pepper flakes
- 2 bay leaves
- 1/4 cup of fresh lemon juice
- Zest of 1 lemon
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Rinse the quinoa and lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and red bell pepper. Cook for 5-7 minutes until the vegetables are softened.
- Add the garlic, thyme, oregano, and red pepper flakes. Cook for an additional 2 minutes until fragrant.
- Pour in the vegetable broth, quinoa, lentils, and bay leaves. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the quinoa and lentils are tender.
- Stir in the lemon juice and lemon zest. Season with salt and pepper to taste.
- Remove the bay leaves and discard.
