Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon coriander
- 1/4 teaspoon cayenne pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 3 cups vegetable broth
- 2 tablespoons harissa paste
- 2 cups spinach, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and cook for 3-4 minutes until softened.
- Stir in the minced garlic, diced carrots, diced celery, and diced red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
- Add the cumin, paprika, coriander, and cayenne pepper. Stir to coat the vegetables in the spices.
- Pour in the drained and rinsed chickpeas, diced tomatoes, vegetable broth, and harissa paste. Bring the stew to a simmer and let it cook for 15-20 minutes, stirring occasionally.
- Stir in the chopped spinach and let it wilt into the stew. Season with salt and pepper to taste.
- Ladle the spicy vegetable chickpea stew into bowls and garnish with fresh cilantro. Serve hot and enjoy!
