  • 4 large whole wheat tortillas

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh mint leaves

  • 4 large whole wheat tortillas
  • 1 cup spicy hummus
  • 1 cup shredded lettuce

  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh mint leaves

Instructions

  • In a food processor, combine 1 can of chickpeas, 1/2 cup chopped onion, 3 cloves minced garlic, 1/4 cup chopped parsley, 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp cayenne pepper, 1/2 tsp salt, and 1/4 tsp black pepper. Pulse until mixture is coarsely ground.
  • Transfer the mixture to a bowl and stir in 2 tbsp of all-purpose flour. Form the mixture into 12 small patties.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat. Cook the falafel patties for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
  • Warm the whole wheat tortillas in a dry skillet for 1-2 minutes on each side.
  • Spread 1/4 cup of spicy hummus on each tortilla. Top with shredded lettuce, diced tomatoes, sliced cucumber, and 3 falafel patties. Sprinkle with chopped fresh mint leaves.
  • Fold in the sides of the tortilla and then roll up tightly. Cut in half and serve immediately.
