  • 1/2 cup warm water
  • 2 cups mashed potatoes
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt. Gradually add 1/2 cup of warm water, kneading the dough until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  • Divide the dough into 4 equal parts. Roll out each part on a floured surface to about 1/8 inch thickness. Cut out circles using a cookie cutter or a glass.
  • Place a spoonful of mashed potatoes in the center of each circle. Fold the dough over the filling, pressing the edges together to seal the vareniki.
  • Bring a large pot of salted water to a boil. Carefully drop the vareniki into the boiling water and cook for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
  • In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of vegetable oil over medium heat. Add the thinly sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 10-15 minutes. Season with salt and pepper to taste.
  • Serve the vareniki hot, topped with the caramelized onions. Enjoy!
