Instructions

  • Preheat the oven to 400 degrees F.
  • Scrub the potatoes and pierce each one several times with a fork. Place them on a baking sheet and bake for 1 hour, or until tender.
  • Remove the potatoes from the oven and allow them to cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving a thin shell. Place the potato flesh in a mixing bowl.
  • Mash the potato flesh with sour cream, butter, and milk until smooth. Stir in 3/4 cup of cheddar cheese and 1/4 cup of green onions. Season with salt and pepper to taste.
  • Spoon the mixture back into the potato shells and sprinkle with the remaining cheddar cheese and green onions.
  • Bake for an additional 15 minutes, or until the cheese is melted and the potatoes are heated through.
  • Serve hot and enjoy!
