  • Remove the spinach from the skillet and set aside.
  • In a small bowl, whisk the egg whites and pour them into the skillet.
  • Cook the egg whites for 2-3 minutes, flipping once, until fully cooked.
  • While the egg whites are cooking, toast the English muffin halves.
  • Assemble the sandwich by placing the cooked egg whites, turkey sausage patties, wilted spinach, and slice of cheese on the toasted English muffin.
  • Put the top half of the English muffin on the sandwich and serve immediately.
