Instructions

  • Preheat the oven to 375°F (190°C).
  • In a medium saucepan, combine 1 cup of quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 diced onion and 2 minced garlic cloves, and cook until softened, about 5 minutes.
  • Add 1 pound of ground turkey to the skillet, breaking it up with a spoon, and cook until browned and cooked through.
  • Stir in 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Add the cooked quinoa, drained diced tomatoes, and 1 cup of frozen peas to the skillet. Stir to combine and cook for an additional 2-3 minutes.
  • Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle 1 cup of shredded cheddar cheese over the top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Enjoy!
