  • 1/4 cup of all-purpose flour

  • 1/2 cup of heavy cream
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 sheets of puff pastry, thawed
  • 1 egg, beaten

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, melt the butter over medium heat. Add the onions and garlic, and cook until softened, about 5 minutes.
  • Add the mushrooms and cook until they release their liquid and start to brown, about 8 minutes.
  • Stir in the flour and cook for 1-2 minutes to remove the raw flour taste.
  • Gradually pour in the chicken broth, stirring constantly to avoid lumps. Bring to a simmer and cook until the mixture thickens, about 5 minutes.
  • Stir in the heavy cream, dried thyme, salt, and pepper. Add the diced turkey and stir to combine. Remove from heat and let the filling cool slightly.
  • Line a 9-inch pie dish with one sheet of puff pastry, trimming any excess. Spoon the turkey and mushroom filling into the pastry-lined dish.
  • Place the second sheet of puff pastry over the filling, trimming any excess and crimping the edges to seal. Brush the top with beaten egg for a golden finish.
  • Cut a few slits in the top to allow steam to escape during baking.
  • Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.
  • Allow the pie to cool for 10 minutes before slicing and serving. Enjoy!
