Tuna Avocado Roll

Ingredients
- 2 cups sushi rice
- 4 sheets nori (seaweed)
- 1/2 pound fresh tuna, sashimi grade
- 2 ripe avocados, sliced
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- Soy sauce, pickled ginger, and wasabi for serving
Instructions
- Rinse the sushi rice in a fine-mesh strainer until the water runs clear. Cook the rice according to package instructions and let it cool.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve. Let the mixture cool.
- Slice the fresh tuna into long strips, about 1/4 inch thick.
- Lay a bamboo sushi mat on a clean surface and place a sheet of nori on top, shiny side down.
- With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Lay a few slices of avocado and tuna in the center of the rice.
- Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
- Slice the roll into 6-8 pieces using a sharp knife.
- Repeat with the remaining nori, rice, tuna, and avocado.
- Serve the tuna avocado rolls with soy sauce, pickled ginger, and wasabi.
