Ingredients
- 1.5 lbs of boneless, skinless chicken breast, cut into 1-inch cubes
- 1 cup of pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1/2 cup of red onion, cut into 1-inch pieces
- 1/4 cup of olive oil
- 1/4 cup of soy sauce
- 2 tablespoons of honey
- 2 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, whisk together 1/4 cup of olive oil, 1/4 cup of soy sauce, 2 tablespoons of honey, 2 cloves of minced garlic, 1 teaspoon of ground ginger, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, pineapple chunks, red bell pepper, yellow bell pepper, and red onion onto the soaked wooden skewers, alternating the ingredients as desired.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
