  • 1 tbsp coriander seeds
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 8 cups water
  • 8 oz rice noodles
  • 1 lb beef sirloin, thinly sliced
  • 1/2 cup bean sprouts
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1 lime, cut into wedges
  • Sriracha sauce, to taste

Instructions

  • Preheat the oven to 425°F. Place the beef bones, onion, and ginger on a baking sheet and roast for 30 minutes, or until browned.
  • In a large pot, dry roast the cinnamon stick, star anise, cloves, cardamom pod, and coriander seeds over medium heat for 2-3 minutes, until fragrant.
  • Add the roasted beef bones, onion, and ginger to the pot. Pour in the water, fish sauce, and sugar. Bring to a boil, then reduce heat and simmer for 3-4 hours, skimming off any foam that rises to the surface.
  • Strain the broth and return it to the pot. Discard the solids. Keep the broth warm over low heat.
  • Prepare the rice noodles according to the package instructions. Divide the noodles among 4 bowls and top with the raw beef slices.
  • Pour the hot broth over the beef and noodles. The heat of the broth will cook the beef slices.
  • Serve the pho with bean sprouts, basil, cilantro, mint, lime wedges, and sriracha sauce on the side for added spice. Enjoy!
