  • 2 medium zucchinis, sliced
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 2 cups of cherry tomatoes, halved
  • 1/4 cup of fresh basil, chopped
  • Salt and pepper to taste

Instructions

  • Preheat grill to medium-high heat.
  • Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side, or until fully cooked. Set aside to cool, then slice into strips.
  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced zucchinis and cook for 3-4 minutes, or until tender. Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 1 minute, or until fragrant.
  • Add the cherry tomatoes to the skillet and cook for 2-3 minutes, or until they start to soften.
  • Return the cooked zucchinis to the skillet. Add the cooked pasta, grilled chicken strips, and chopped basil. Toss everything together and cook for an additional 2-3 minutes to heat through.
  • Season with salt and pepper to taste.
  • Serve the tomato basil zucchini pasta with grilled chicken hot, topped with grated Parmesan cheese.
