  • 4 large tomatoes, diced
  • 1/4 cup of fresh basil, chopped

Instructions

  • Cook 8 oz of spaghetti according to package instructions. Drain and set aside.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
  • Add 4 large diced tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
  • Stir in the cooked spaghetti and 1/4 cup of chopped fresh basil. Season with salt and pepper to taste. Toss to combine and heat through for 2-3 minutes.
  • Remove from heat and sprinkle 1/4 cup of grated Parmesan cheese over the pasta. Toss once more to combine.
  • Serve the tomato basil pasta immediately, garnished with additional basil leaves and extra Parmesan cheese if desired. Enjoy!
