Ingredients
- 1 cup of long-grain white rice
- 1 1/2 cups of vegetable broth
- 1/2 cup of coconut milk
- 1 tablespoon of vegetable oil
- 8 ounces of firm tofu, cubed
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a medium saucepan, combine 1 cup of rice and 1 1/2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- In a separate skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and celery. Cook for 5-7 minutes, or until the vegetables are softened.
- Stir in the minced garlic, paprika, dried thyme, and cayenne pepper. Cook for an additional 1-2 minutes, until fragrant.
- Pour in 1/2 cup of coconut milk and bring the mixture to a simmer. Cook for 3-4 minutes, allowing the flavors to meld together.
- Add the cooked rice and tofu to the skillet, stirring to combine. Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
- Enjoy your creamy coconut tofu vegetable dirty rice!
Tofu Vegetable Dirty Rice is a flavorful and satisfying dish with a hint of coconut milk for creaminess. This fusion dish combines the bold flavors of traditional dirty rice with the creamy richness of coconut milk. Originating in the southern United States, dirty rice is a Cajun dish traditionally made with meat, vegetables, and spices. However, the addition of tofu and coconut milk adds a unique twist to this classic recipe, creating a delicious and vegan-friendly alternative. Chefs in New Orleans have been known to experiment with this dish, infusing it with their own creative flair. For the best version of this dish, seek out restaurants that specialize in vegan or Cajun cuisine. The key to getting this dish right lies in the perfect balance of spices, the creaminess of the coconut milk, and the texture of the tofu. Alternatively, some chefs also incorporate alternative methods such as grilling the tofu for a smoky flavor or using different vegetables to add variety to the dish.
