Ingredients
- 1 cup of long-grain white rice
- 1 1/2 cups of vegetable broth
- 1/2 cup of coconut milk
- 1 tablespoon of vegetable oil
- 8 ounces of firm tofu, cubed
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a medium saucepan, combine 1 cup of rice and 1 1/2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- In a separate skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and celery. Cook for 5-7 minutes, or until the vegetables are softened.
- Stir in the minced garlic, paprika, dried thyme, and cayenne pepper. Cook for an additional 1-2 minutes, until fragrant.
- Pour in 1/2 cup of coconut milk and bring the mixture to a simmer. Cook for 3-4 minutes, allowing the flavors to meld together.
- Add the cooked rice and tofu to the skillet, stirring to combine. Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
