Ingredients
- 1 cup basmati rice
- 1 1/2 cups water
- 1 block (14 oz) firm tofu, drained and cubed
- 1/2 cup cashew nuts
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 1/4 cup plain yogurt
- 1/4 cup chopped fresh cilantro
- Salt to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it stand covered for 5 minutes. Fluff with a fork and set aside.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the tofu cubes and cashew nuts. Cook until the tofu is golden brown and the cashew nuts are toasted, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Stir in the cumin seeds, ground coriander, ground cumin, turmeric, and cayenne pepper. Cook for 1 minute until fragrant.
- Add the mixed vegetables and cook for 5 minutes, stirring occasionally.
- Gently fold in the cooked rice, toasted tofu, and cashew nuts. Add the plain yogurt and chopped cilantro. Season with salt to taste. Mix well to combine all the ingredients.
- Cover the skillet and let the biryani cook for another 5 minutes on low heat to allow the flavors to meld together.
