Tofu Tikka Masala

Ingredients
- 14 oz (400g) firm tofu, drained and cubed
- 1 cup plain yogurt
- 2 tablespoons tikka masala spice blend
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 can (14 oz) crushed tomatoes
- 1 cup vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/2 cup heavy cream
- Fresh cilantro for garnish
Instructions
- In a bowl, mix the plain yogurt with 1 tablespoon of tikka masala spice blend. Add the cubed tofu and toss to coat. Let it marinate for at least 15 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Stir in the remaining 1 tablespoon of tikka masala spice blend, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
- Add the crushed tomatoes and vegetable broth to the skillet. Season with salt and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Using an immersion blender, blend the sauce until smooth. Alternatively, transfer the sauce to a blender and blend until smooth, then return to the skillet.
- Stir in the marinated tofu and cook for 10 minutes, stirring occasionally. Add the heavy cream and cook for an additional 5 minutes.
- Garnish with fresh cilantro and serve the tofu tikka masala with steamed rice or naan bread.
