Tofu and Vegetable Stir-Fry Bowl

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of snap peas
- 1 carrot, julienned
- 1/2 cup of sliced mushrooms
- 3 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- Cooked rice or quinoa for serving
- Sesame seeds and green onions for garnish
Instructions
- In a small bowl, mix together 1/4 cup of soy sauce and 2 tablespoons of hoisin sauce. Set aside.
- In a large wok or skillet, heat 1 tablespoon of sesame oil and 1 tablespoon of vegetable oil over medium-high heat.
- Add the cubed tofu to the wok and cook until golden brown on all sides. Remove from the wok and set aside.
- In the same wok, add the remaining 1 tablespoon of vegetable oil and sauté the minced garlic and grated ginger for 1 minute.
- Add the broccoli, bell peppers, snap peas, carrot, and mushrooms to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the wok and pour the soy-hoisin sauce mixture over the tofu and vegetables. Stir-fry for an additional 2-3 minutes until everything is well coated and heated through.
- Serve the tofu and vegetable stir-fry over cooked rice or quinoa. Garnish with sesame seeds and sliced green onions. Enjoy!
