  • 1 cup of broccoli florets
  • 1 cup of sliced carrots
  • 1 cup of snap peas
  • 3 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 1/4 cup of vegetable broth
  • 2 green onions, chopped
  • Cooked rice or quinoa for serving

Instructions

  • In a bowl, toss the cubed tofu with 1 tablespoon of soy sauce, sesame oil, and cornstarch until evenly coated.
  • Heat vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  • In the same skillet, add the bell pepper, broccoli, carrots, and snap peas. Cook for 3-4 minutes until the vegetables are tender-crisp.
  • Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes.
  • Pour in the vegetable broth and remaining 1 tablespoon of soy sauce. Stir to combine and bring to a simmer.
  • Return the cooked tofu to the skillet and toss everything together until heated through.
  • Divide the tofu stir-fry and vegetables among serving bowls. Top with chopped green onions and serve over cooked rice or quinoa.
