Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 1 bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of sliced carrots
- 1 cup of snap peas
- 3 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 1/4 cup of vegetable broth
- 2 green onions, chopped
- Cooked rice or quinoa for serving
Instructions
- In a bowl, toss the cubed tofu with 1 tablespoon of soy sauce, sesame oil, and cornstarch until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the bell pepper, broccoli, carrots, and snap peas. Cook for 3-4 minutes until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes.
- Pour in the vegetable broth and remaining 1 tablespoon of soy sauce. Stir to combine and bring to a simmer.
- Return the cooked tofu to the skillet and toss everything together until heated through.
- Divide the tofu stir-fry and vegetables among serving bowls. Top with chopped green onions and serve over cooked rice or quinoa.
