  • 8 oz of lo mein noodles
  • 1 block of firm tofu, drained and cubed
  • 2 tbsp of vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup of snow peas
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 3 tbsp of soy sauce
  • 2 tbsp of oyster sauce
  • 1 tbsp of sesame oil
  • 1/4 cup of vegetable broth
  • 2 green onions, chopped
  • 1 tsp of cornstarch
  • Salt and pepper to taste

Instructions

  • Cook the lo mein noodles according to the package instructions. Drain and set aside.
  • In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, vegetable broth, and cornstarch. Set aside.
  • In a large pan or wok, heat 1 tbsp of vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the pan and set aside.
  • In the same pan, add the remaining 1 tbsp of vegetable oil. Add the red bell pepper, snow peas, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  • Add the cooked lo mein noodles and the sauce mixture to the pan. Toss everything together until the noodles are well coated with the sauce.
  • Add the cooked tofu back to the pan and toss to combine. Season with salt and pepper to taste.
