Instructions

  • In a small bowl, mix 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Add the cubed tofu and let it marinate for 10 minutes.
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated tofu and cook until golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the sliced red and yellow bell peppers, broccoli florets, and snap peas. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the cooked tofu to the skillet with the vegetables and toss to combine.
  • In a small saucepan, prepare the spicy peanut sauce by combining 1/4 cup of peanuts with 1/4 cup of soy sauce, 2 tablespoons of peanut butter, 1 tablespoon of sriracha, and 1 tablespoon of honey. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
